From fresh chèvres and tangy goat cheeses to mild, spring-produced cow’s milk varieties, you’ll discover how seasonal changes influence the taste and character of cheese.
CHEESEBOARD 101 1HR&30M - A hands on workshop where you will discover the art of crafting a beautiful and delicious cheeseboard while learning about different cheese varieties, pairings, and presentation techniques.
INTRODUCTION TO CHEESE 1HR&30M - We’ll explore how cheese is made, the role of aging and fermentation, and how factors milk type and regional traditions shape its unique flavors and textures. You’ll also learn how to properly taste and pair cheeses with complementary foods and beverages.
CHEESE PAIRING 101 2 HR - Unlock the secrets of pairing cheese with a variety of complementary foods and drinks in this beginner-friendly class. Whether you’re new to the world of cheese or looking to refine your palate, this course will guide you through the essential principles of pairing.
CHEESE & CHOCOLATE PAIRING 1HR - Discover the unexpected harmony of two of the world’s most beloved indulgences—cheese and chocolate. This course will guide you through the art of pairing these rich, complex flavors, teaching you how to balance textures, intensities, and tasting notes to create unforgettable combinations.
COW’S MILK GUIDED TASTING 1HR - You’ll learn about the unique qualities of cow’s milk, including its versatility and the way it adapts to different cheesemaking techniques.A key part of the course will focus on the difference between A1 and A2 milk, which varies in the type of beta-casein protein it contains. Through guided tastings, we’ll explore popular cow’s milk cheeses like Cheddar, Brie, Gouda, and Parmigiano-Reggiano, alongside artisan varieties that highlight the nuances of this milk.
GOATS MILK GUIDED TASTING 1HR - We’ll explore the characteristics that set goat’s milk apart, including its digestibility, texture, and the unique flavors influenced by seasonality and terroir. Through guided tastings, you’ll experience a range of goat’s milk cheeses and dairy products, learning how to identify subtle notes and perfect pairings.
SHEEP’S MILK GUIDED TASTING 1HR - You’ll learn what makes sheep’s milk unique, including its high butterfat and protein content, which contribute to its luxurious mouthfeel and depth of flavor. Through guided tastings, we’ll explore classic sheep’s milk cheeses like Manchego, Pecorino, and Roquefort, as well as lesser-known artisanal selections.
FONDUE EDUCATION + EXPERIENCE 2HR - Dive into the warm, indulgent world of fondue with this hands-on class that blends education with a delicious tasting experience. You’ll learn the history and cultural significance of fondue, the science behind perfect melting, and the techniques for crafting smooth, flavorful dips. Best of all, each participant will get to enjoy a shared pot of fondue, complete with an assortment of breads, fruits, and other delicious dippables.
